Plant-centered diets are more than just a trend – they are a common theme in building a healthful diet. Meatless Mondays or committing to go plant-based any day of the week is an easy way to include more plant-based meals in your life. Try vegging-out at least one day a week with easy weekday meals like Curried Coconut Red Lentils, Mediterranean Spaghetti Squash with Pesto, Coconut Black Bean Tostadas with Pineapple Salsa, and Chocolate Mousse.
