Let’s face it, kimchi is pretty amazing, and now you can make it just the way you like it – easily, economically, and anytime you have the urge for its delightful, fermented goodness. Today, we will make kimchi with three kinds of vegetables – Chinese cabbage, daikon, and cucumber – and learn to use kimchi in cooked and raw dishes. Prepare and enjoy samples of simple dishes of Kimchi Rice, Avocado-Kimchi Salad, and Kimchi Miso Soup. Please bring a wide-mouth pint-sized jar to take some home.
