Oaxaca is one of Mexico's major gastro-historical centers whose cuisine is known internationally due to the influence of the state's varied geography and indigenous cultures. Legend has it that molé came from pre-hispanic times, and the Aztec king Moctezuma, thinking the conquistadors were gods, served molé to Cortez at a banquet to receive them. The word molé comes from the Nahuatl word “milli” which means sauce or “concoction”. Class begins with a cup of Coconut Atole or Cacão Champurrado while we chat a bit about the varied culture and cuisine of Oaxaca. We will then prepare Ceviche, Molé Negro with Chicken, and Cilantro Tortillas, and finish by tasting Horchata Ice Cream. Gluten- free
