Tukemono is the art of Japanese vegetable fermentation.  In this class, we will use fresh, seasonal vegetables and explore the Tukemono methods:  a tamari and a vinegar lacto-fermentation; fermentation using rice bran; and a miso fermentation.  Learn to preserve the best of local produce – such as turnips, daikon, and greens – and take it to an entirely new level of flavor and fermented goodness! Consider bringing a wide mouth container or two with a tight-fitting lid.
